My Special day at school National Lunch Week



Well my Curry chicken Salad was a hit for the National Lunch Week.. I think everyone enjoyed it even my principal Mr. Price. Here's some pictures from my wonderful day at school. Oh don't forget I'll be down at the farmers market on Saturday October 20th 2012

Well I must say this week will be a very busy week for me. I'm starting the week off with my recipe being served to all Fayette County Public schools I hope everyone likes my curry chicken salad. And I will be with Chef from Good Foods to prepare by Curry Chicken Salad for the Lexington Farmers Market. I'm so blessed right now that I'm able to tell young people about how to eat healthy and stay fit.

Well I received my photo of me , my mom and The First Lady of United States Mrs. Michelle Obama.. how awesome is that. I must say me and my mommy looked really good standing next to my idol.  Sorry I can't post the picture due to strict rules just take my word its a great picture.

Well its fall season and its that time to make chili and soups. This is a new thing for me but I'm going to try some new things for the fall and winter months.

I made mini cupcakes for the Tom Thumb wedding that was held at my church 7th Street Christian Church. It was a hit. I love making things for people.

Also my school be doing my recipe on October 16th.. I can't wait....

The Lexington Farmers’ Market is pleased to announce the appearance of Healthy Lunchtime Challenge Winner, Myka Smith Jackson, at market on the 20th of October. Eight year old Myka was one of 54 winners in the contest held by the recipe blog, Epicurious, and the First Lady Michelle Obama's Let’s Move! Initiative. The contest called on 8 to 12 year old in the U.S. to submit original recipes to then be voted on by a panel of celebrity chefs. Winners were invited to attend the Kids’ State Dinner in Washingt...
on D.C at the White House. Myka attended the state dinner on the 20th of August, held by Michelle Obama herself, as the Kentucky representative.

Starting on Friday, October 19th, Myka will partner will Chef Alex Jenkins of The Good Foods Co-Op to prep and prepare her recipe, Perfect Curry Chicken Wraps to be sampled at market the following Saturday from 9-11am. The Lexington Farmers’ Market will provide ingredients to be used in the recipe.

Myka will help wrap up National School Lunch Week held October 15th- 19th, where her recipe will be featured in cafeterias across Fayette county, and begin the celebration of National Food Day held on October 24th.

Good afternoon well I had an exciting week I received a personlized photo of my favorite chef Paula Deen. That made my day. I love being a chef and I love making people happy. Today I'm going be making my Curry Chicken Salad for my great grandmother i hope she loves it. Have a great day.

Wow I had a great night on Sept 24th 2012 I got honored by the Fayette County Board of Education Board committee. It was several students that got awards that night. I got to shake the Superintendent hand Mr. Tom Shelton and all the other board members.

I told my mom last night that " THE FUTURE IS UP TO ME, MY MOMMA, AND JESUS. I was hoping for a certificate for a scholarship but I love my medal.. I'm truly blessed.

Yesterday I made a really healthy dish that is only 367 calories..

Lemon Garlic Shrimp and Grits
It was very good and very easy to make here is the recipe enjoy.




Ingredients

4 cups water

  • 1 cup stone-ground grits
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 tablespoon unsalted butter
  •  
  • 1 pound uncooked medium shrimp - peeled and deveined, tails left intact
  • 2 tablespoons unsalted butter
  • 2 large cloves garlic, minced
  • 1 pinch cayenne pepper (optional)
  • 2 tablespoons water
  • 1/2 lemon, juiced
  • 2 tablespoons coarsely chopped fresh parsley
  • 1/2 lemon, cut into wedges

Directions

  1. Bring 4 cups water to a boil in a saucepan and slowly whisk in grits, followed by salt and black pepper. Reduce heat to low and simmer the grits until tender and thickened, about 30 minutes.
  2. Stir 1 tablespoon unsalted butter into grits, season with more salt and black pepper if needed, and remove from heat. Cover pan and keep grits warm.
  3. Sprinkle shrimp with salt and black pepper. Melt 2 tablespoons unsalted butter in a skillet over medium-high heat; cook and stir shrimp, garlic, and cayenne pepper until shrimp are pink and no longer translucent inside, 3 to 4 minutes.
  4. Stir 2 tablespoons water into shrimp and mix in lemon juice and parsley. Sprinkle with more salt and pepper if desired.
  5. Portion cooked grits into serving bowls and top with shrimp and sauce; serve with lemon wedges.
