CHRISTMAS TIME

Hello everyone its been awhile been busy with school and gettng my orders ready for christmas. So I have asked Santa for a  chef coat and cooking stuff for christmas hope he will get these things for me. I love to cook and I have been doing very well on my curry chicken salad and actually its being sold at the Good Food Market and Cafe hope you able to swing by if you are in Lexington Ky... Any way I have a new cupcake that I may share with everyone.. Chocolate Chip Cookie dough Cupcakes its going to be awesome...

Thanksgiving

Thanksgiving was here and gone.. What I did on Thanksgiving was help my aunt cook of course. But on Wednesday  11/21/12 I had my open house where I was able to speak to family and friends and tell them about my adventure to the White House. I served  my famous Curry chicken Salad, Crab Wonton Cresent rolls, Beer Bread w/ 2 kinds of dips, mini key lime cupcakes and Lemonade Punch.

I had a wonderful turn out and everyone enjoyed my appetizers.

11/22/12 Thanksgiving spend time with family and cousins I haven't seen forever it was great seeing them again and I told them about my experience in White House. Also my pen pal from my trip to Washington wrote this on her thankful tablecloth she is from New Hampshire..... Ella Barrett my friend....


11/23/12  What can I say.. HAPPY BIRTHDAY TO ME.. yes it was my 9th birthday and I had a ball went Black Friday shopping and spend time with my family at Applebees.  Here is me on my birthday




I had a wonderful day and blessed to see 9 years old... :-)

GIVING BACK

Hello everyone well I been very busy and just now getting back on here to say.. I'm ready for christmas.. I told my mom all I want is cooking stuff like a new mixer, new cutting board and hope a new chef coat.. I can't wait...

Also I want to give back and serve homeless families dinner for Christmas.. and I have so many books that I dont' read anymore that I would love to give to kids.

Myka's Last couple of days

Hello everyone well I been one busy little girl. First of all I actually cooked dinner for my mother birthday which was on November 4..She turned 38... I cooked her a great meal with the help from my Nana... Dinner was Pork tenderlion, Macaroni and cheese, green beans, stuffing, deviled eggs, and rolls. I invited family and friends. It was so awesome.


On the other hand I have started taking orders for my Key Lime cupcakes and my Curry Chicken salad. I got several orders and they loved them. I have two more orders for my Key Lime and one for my Curry Chicken salad.

I'm selling my cupcakes for 1.00 but had to raise my price to 1.50 per cupcake limit is dozen
and Curry Chicken salad is $20.00 that will feed about 10-12 people and makes about 10 wraps.

Well its my mom's birthday on Sunday and at first I wanted to take her out to eat but I think that I will cook her something.. mmmmm thinking on what will be good for me to cook. I may just go thru my Healthy Lunchtime cookbook and pull something out... I'll let you know the outcome.

My Awesome weekend at Good Foods/Lexington Farmers Market

I would like to thank Chef Alex and Executive Director Jeff of the Lexington Farmers Market for giving me the opprotunity to give the local farmers and people of Lexington a chance to sample my Perfect Curry Chicken Wrap. It was awesome to meet all the local farmers and get to tour the Good Food Store. Here are some pictures of my adventure. I had so much fun and seeing the look on every ones face I'm smiling... We served almost 100 samples of my curry chicken Salad Wraps.
Thanks  to Elmwood Farm for providing me with the Chicken and Celery and Good Foods Market/Cafe' for the use of the kitchen, apples, raisins, curry , wraps and mayo.

My Special day at school National Lunch Week

Well I must say this week will be a very busy week for me. I'm starting the week off with my recipe being served to all Fayette County Public schools I hope everyone likes my curry chicken salad. And I will be with Chef from Good Foods to prepare by Curry Chicken Salad for the Lexington Farmers Market. I'm so blessed right now that I'm able to tell young people about how to eat healthy and stay fit.

Well its fall season and its that time to make chili and soups. This is a new thing for me but I'm going to try some new things for the fall and winter months.

I made mini cupcakes for the Tom Thumb wedding that was held at my church 7th Street Christian Church. It was a hit. I love making things for people.

Also my school be doing my recipe on October 16th.. I can't wait....

The Lexington Farmers’ Market is pleased to announce the appearance of Healthy Lunchtime Challenge Winner, Myka Smith Jackson, at market on the 20th of October. Eight year old Myka was one of 54 winners in the contest held by the recipe blog, Epicurious, and the First Lady Michelle Obama's Let’s Move! Initiative. The contest called on 8 to 12 year old in the U.S. to submit original recipes to then be voted on by a panel of celebrity chefs. Winners were invited to attend the Kids’ State Dinner in Washingt...
on D.C at the White House. Myka attended the state dinner on the 20th of August, held by Michelle Obama herself, as the Kentucky representative.

Starting on Friday, October 19th, Myka will partner will Chef Alex Jenkins of The Good Foods Co-Op to prep and prepare her recipe, Perfect Curry Chicken Wraps to be sampled at market the following Saturday from 9-11am. The Lexington Farmers’ Market will provide ingredients to be used in the recipe.

Myka will help wrap up National School Lunch Week held October 15th- 19th, where her recipe will be featured in cafeterias across Fayette county, and begin the celebration of National Food Day held on October 24th.

Wow I had a great night on Sept 24th 2012 I got honored by the Fayette County Board of Education Board committee. It was several students that got awards that night. I got to shake the Superintendent hand Mr. Tom Shelton and all the other board members.

I told my mom last night that " THE FUTURE IS UP TO ME, MY MOMMA, AND JESUS. I was hoping for a certificate for a scholarship but I love my medal.. I'm truly blessed.

Yesterday I made a really healthy dish that is only 367 calories..

Lemon Garlic Shrimp and Grits
It was very good and very easy to make here is the recipe enjoy.




Ingredients

4 cups water

  • 1 cup stone-ground grits
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 tablespoon unsalted butter
  •  
  • 1 pound uncooked medium shrimp - peeled and deveined, tails left intact
  • 2 tablespoons unsalted butter
  • 2 large cloves garlic, minced
  • 1 pinch cayenne pepper (optional)
  • 2 tablespoons water
  • 1/2 lemon, juiced
  • 2 tablespoons coarsely chopped fresh parsley
  • 1/2 lemon, cut into wedges

Directions

  1. Bring 4 cups water to a boil in a saucepan and slowly whisk in grits, followed by salt and black pepper. Reduce heat to low and simmer the grits until tender and thickened, about 30 minutes.
  2. Stir 1 tablespoon unsalted butter into grits, season with more salt and black pepper if needed, and remove from heat. Cover pan and keep grits warm.
  3. Sprinkle shrimp with salt and black pepper. Melt 2 tablespoons unsalted butter in a skillet over medium-high heat; cook and stir shrimp, garlic, and cayenne pepper until shrimp are pink and no longer translucent inside, 3 to 4 minutes.
  4. Stir 2 tablespoons water into shrimp and mix in lemon juice and parsley. Sprinkle with more salt and pepper if desired.
  5. Portion cooked grits into serving bowls and top with shrimp and sauce; serve with lemon wedges.

Hello everyone well this weekend I attended my momma's 20 year class reunion met new friends and my momma friends she went to High school with. They had lots of different foods and desserts.

I took my Curry Chicken Salad and it was a hit. They all loved it. So I placed the recipe on facebook for all her classmates to see and can make it for their kids.

I'll be at the Farmers Market on October 20th. Telling everyone about my trip to Washington DC. I love to share my story with everyone and hope that everyone starts eating Healthy and staying Fit.

Hello everyone well last night me and mom tried some different recipes. I'm trying to get her to start eating healthy and I have to say she is doing a great job.

Last night I made a veggie salad I must say it was pretty good. Here is the recipe

Myka's Veggie Salad

1 or 2 cucumber
3 Roma tomatoes
1 red onion
1/4 cup of red wine vinaigrette
 1/3 cup of splenda sugar ( you may use regular sugar too)
1/4 cup of EVOO ( extra virgin olive oil)
1tsp of salt

My season blend I just keep in jar
rosemary
Italian season
minced dry garlic


Chop all your veggies and you can put what ever veggies you like I just like these. Place in a bowl and add your red wine vinaigrette, sugar, evoo, and salt and season blend mix all together and let it chill for a couple hours and it then its ready.. so delish.

Well over the weekend was very busy. Went to Roots and Heritage Festival with my momma and my aunt Chamel. We had fun got to sample lots of food. I'm going be trying several recipes this week. I'll keep you posted.

This weekend on September 15th I'll be making my Curry Chicken Salad for my momma 20th High School Class Reunion. I hope they like it.

September 24th I will be honored by the Fayette County Board of Education board memebers for my winning recipe.

Hello everyone its me Myka.. and over the weekend I was on an appetizer roll... so today I'm going to share with you Jalapeno Poppers made with either bacon or turkey bacon to make it healthier.. So here you go: Bite Size jalepeno poppers with bacon/cream cheese wrapped in crescent roll

First you take non crease  crescent rolls and cut into squares

After you cut up your jalopeno pepper you place on the crescent roll square

As you can see here now you can add turkey bacon as well and its delish.


wrap up and place in oven till bread is done.. awesome.. you will love them as snack.

Today I made Margarita Cupcakes they turned out pretty good. It called for pretzel which I'm not a fan of, but I must say it turned out pretty good.

Margarita Cupcakes.

Pretzel Mixture
1 1/2 cups crushed pretzels
1/4 cup butter or margarine, melted
2 tablespoons sugar
Cupcakes
1 box Betty Crocker® SuperMoist® white cake mix
3/4 cup nonalcoholic margarita mix
1/3 cup unsalted butter
1/4 cup water
2 teaspoons grated lime peel
4 egg whites
Topping
1 1/2 cups frozen (thawed) whipped topping
2  containers (6 oz each) Yoplait® Light Fat Free Key lime yogurt
2  teaspoons grated lime peel
1/3 cup coarsely crushed pretzels
 Heat oven to 350°F (325°F for dark or nonstick pans). Place paper baking cup in each of 24 regular-size muffin cups.
  • 2 In small bowl, mix pretzel mixture ingredients until blended. Spoon about 1 tablespoon mixture in each cup.
  • 3 In large bowl, beat cupcake ingredients with electric mixer on low speed 30 seconds, then on medium speed 2 minutes, scraping bowl occasionally. Divide batter evenly among cups (two-thirds full).
  • 4 Bake 18 to 23 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pan to cooling rack. Cool completely.
  • 5 In medium bowl, fold whipped topping, yogurt and 2 teaspoons lime peel until blended; frost cupcakes. Sprinkle with coarsely crushed pretzels. Store loosely covered in refrigerator.

    Last night I watched Julie and Julia It was very funny and I learned that one day you be able to learn different ways of cooking and I liked how she was not a good cook but learned how to be a great cook and then became a teacher.

    Not only am I a JR CHEF. I also do karate! So I tested Saturday August 25 and recieved my BLUE BELT. Yay me.
    My recipe will be served during the National Lunch Week October 15-19. Whoo Hoo.. I hope they serve my recipe in all the schools in Kentucky.
